I have few questions about powering up a 60 LEDs NeoPixel strip.
- If I use a 1000 µF - 10V it will work ?
- At the moment I don't have the 5V - 3.5A power cable that is needed, I have only a 5V - 2A power cable: it will work with a reduced brightness/response time or it won't work at all ?

Yes, that should be fine.- If I use a 1000 µF - 10V it will work ?
It will work. You just won't be able to drive all pixels to full brightness at the same time.I don't have the 5V - 3.5A power cable that is needed, I have only a 5V - 2A power cable: it will work with a reduced brightness/response time or it won't work at all ?

I need another little help: I can't find a power cable that fits the requested specifics (5v @ 3.5A), were can I search for ? I need that can be shipped to Italy!

Re: Powering NeoPixel LEDs Strip
This 5v/4A one should work for you: https://www.adafruit.com/products/1466
It comes with a US style plug, but can run on up to 240VAC.
