Regarding this particular thermistor: http://www.adafruit.com/products/372

Is this food safe? Can I use this product to monitor the temperature of hot liquids up to 83°C?

I realize the probe's coating is rated to 105°C, I need something that is food safe at these temperatures too. I don't plan on needing it for temps above 83°C.

It is not certified food-safe. We do have food-grade heat-shrink: https://www.adafruit.com/product/1020
But you would need to seal the end with something food-safe as well.
