I have an Adafruit single capacitive touch button and I need to reduce the
sensitivity. I can't find the Cs detail to lower the value.

The only way to reduce its value is to remove it and solder in a new one, which would be a delicate job.
You can also reduce sensitivity by increasing the capacitance of the touch pad. Try putting a layer of plastic between the PCB and the touch surface. Pretty much any plastic should work, but polyester, polystyrene, and teflon are used to make high-quality capacitors.
