Hello
My friends and I are working on a project involving your Adafruit LSM9DS0 sensor and the Arduino Uno. We want to send data from two of these sensors to the Arduino and then transmit it via the Bluefruit EZ-Link Shield Bluetooth device. We just want to know if we are even able to send data from two sensors at the same time using the Bluefruit EZ.

Yeah, that should work.
The EZ-Link doesn't know anything about the data it transmits, it just sends whatever the Arduino gives it. If the Arduino creates a data stream using information from two LSM9DS0 breakouts, the EZ-Link will be happy to transmit it.
