I recently bought two nRF8001 Bluetooth Low Energy boards. My eventual use will involve reading from both at once, I hope. I have them soldered to headers and was able to get the first board talking to my Uno R2. I tried to connect the second board to other Arduinos and could not get it working. I then connected it back to the first, and found the second board doesn't function. If I take the first brakeout board off the breadboard and put in the second, it fails, and it works when I put it back.
What's the next step?

Could you post clear, detailed pictures of your board and the connections to it?

Try reflowing the ground pins. Both look marginal. The problem with grounds is they are most often attached to a "ground plane" and suck heat from the connection faster than most making them harder to solder.
