That depends on what you are wiring. Please provide more detail.

a pot to the arduino and also a L298n motor controller

For signal connections, you can use any small gauge wire. We typically use 22AWG hookup wire.
For power connections, you need to know the current draw of the load to estimate the appropriate wire size.
