Alternatives to the IDE

The Arduino IDE is a fantastic way to get started, but now I find myself frustrated with being so insulated from what is going on behind the scenes. I would like to go to a much more traditional development environment using vi, make and git. Are there any good guidelines to making the transition? Since gcc and avrdude are included in the IDE. I'm hoping I can leverage the already existing tools. And, this is all on Linux (Fedora 20 at the moment).

In addition, any suggestions on uploading projects to github?
