LCD Shield Question

I was looking at the tutorial on the two-pin LCD shield that Adafruit sells and was wondering how one would connect sensors to the input pins of the board while also using the shield.Would the sensor input have to be soldered or could they still be used with headers? This is the tutorial I am looking at: http://ladyada.net/make/rgblcdshield/solder.html

It looks as if it covers all of the inputs so I am unsure of how to connect additional pins.

You can build the shield with stacking headers to expose the headers on the shield too.
