I bought the "Music Maker MP3 Shield for Arduino w/3W Stereo Amp". Nice.
I connected speakers through the terminal blocks. Sound is surprisingly good.
It seems though that the speakers don't cut out when connecting
headphones. Should they? Is the built-in audio jack not one with a
switch?
I realize now the description doesn't mention this. I had just assumed
because the Wave shield description mentions this feature (and the
music maker felt like a fancier alternative).

Yes, that's the way it operates. The amp is in parallel with the headphones. The phone jack doesn't have a switch.

I suppose it's possible, but you'd have to do a lot of hardware hacking. The schematics and board layout are in the tutorial:
