I am looking at purchasing the bluefruit shield once it is back in stock, but I first need to know if the shield is capable of connecting with 2x video game (P,S,3 (Sorry, banned word)) controllers at a time. Is this possible? I appreciate any help.

Nope.
Bluetooth separates devices into 'central' and 'peripheral' categories. Central devices initiate and control connections, peripheral devices do what the central tells them to. That puts most of the cost and complexity in the central device, allowing peripherals to be smaller, simpler, lower power, and cheaper.
The BT module in the EZ-Link shield is a peripheral device. It can't initiate connections to other BT devices.
