I have never used the breakout sockets for SOIC's before, and can't find a six pin made for the ATTiny10 series. Can I use the eight pin socket on the six pin product? Thanks.

Not if your ATTiny10 is in the SOT-23 package.
The test socket is made for SOIC-8 packages, which have a nominal body width of about 3.9mm, and a nominal pin span of about 6mm. The datasheets for the ATTin10 that I have say is comes in an SOT-23 package, which has a nominal body width of about 1.3mm, and a nominal pin span of about 2.4mm.

I haven't soldered it up yet, but I bought a couple of these breakouts to try with an ATtiny10. I'll try to remember to report back how they work, but they look promising at least.

Neat.. looks kinda like one of the Surfboard designs, and those are fun to work with.
We have our own SOT-23 breakouts here: http://www.adafruit.com/products/1230 , and making breakouts is always a good way to get experience designing and etching your own PCBs. They're simple, the routing tends to be easy, you don't have to use crazy-narrow traces, and you can get good yields from a relatively small amount of copper-clad.
