hello,
I've been having a little trouble desoldering larger components, and sometime shall components with my new HAKKO FX-888D.
I have to either assist it with my rework station, or use my radio shack iron. I tried setting the HAKKO to factory defaults. No change.
I tested it best I can with a K-Type thermocouple and my multimeter. I tested the thermocouple in boiling water, and it reads 209F. I'm at sea level.
For testing I placed the thermocouple on paper, and pressed the flat of the chisel tip firmly onto it and kept it in contact through temp changes.
I changed the iron's temp setting up to the next level only after the multimeter reading leveled off and fluctuated at a stable temp.
Below are the test results. The format is: iron setting/iron temp display/thermocouple reading
120/120/95
220/220/169
320/320/250
420/420/328
520/520/396
620/620/488
720/720/564
820/820/602
850/850/591
899/899/628

it sounds to me like you either need it calibrated or need to buy a new heater. I believe the calibration instructions are in the manual... and hakko.com has the replacement heaters for $20 usd.

Sounds like it needs calibration.
Press the UP button until the first digit on the display starts flashing. Release the UP button, then use short presses to adjust that digit to the first digit of the measured temperature. Press ENTER to move to the next digit, adjust that, then adjust the last digit. When you press ENTER the third time, the controller should accept that value as the new temperature.
