I'm going to attempt this project as a christmas gift to my sister.
I'm trying to source all the components from adafruit so I can rush the shipping. Finals have me really behind on starting this.
In particular I'm trying to find an LED strip that will be equivalent for this project. It appears all the LED strips on adafruit at 9-12v and the one called for is 5v. Could anyone give me some advice?

It sounds like you need this: https://www.adafruit.com/products/1376
The description of 1376 says that it originates as a 5-meter reel. So if you order 5 meters you should get a full reel (with connectors at both ends - yay!). But it sounds like you can't predict if you'll get 2-pin or 3-pin JST connectors - be prepared.

Does adafruit also sell a switching 5v psu like what is called for in the project? it appears that there are bricks that I would have to cut the end off and strip myself.

I'd suggest using a brick and a splitter cable (1351 or 1352) - then hack the splitter cable if necessary.
An in-line switch (1125) might be nice as well depending on how you want to route the power.
