At the beginning of next year, I would like to do an LED panel or strip light project with about 20 students. I would like the course to focus on wiring the lights in a series and programing the lights to display messages or a light show.
My questions-What product should I use-Panels or strip lights? Is this something that middle school students can do? What controls and power supplies should I use?

Your goals are not clear. Do you want the students to do wiring and electronics or programming and execution? These will require different products.

As I have looked at some projects that other students have done, I think it would be a combination of both. I would like the students to build a large panel using series of smaller panels or LED tape and then program it to do different things. I am fine with using a combination of products.

Here is a good starter project. It is a variation of the space invaders pendant tutorial. I found the soldering was too much for beginners so I adapted it to have less soldering.
