Are there technical or security reasons why a 2nd usb wifi adapter shouldn't (or couldn't) be
used when creating an Onion Pi, instead of using one usb wifi adapter and
an ethernet cable?

I don't believe the Pi Model B's USB power budget can support two WiFi modules. Otherwise, no, there's no reason why you can't do that. You could attach the WiiFi modules through a self-powered USB hub
