Hello,
I have been trying to get the PiTFT Mini 320x240 2.8" TFT+ Capacitive Touchscreen kit to work with Octopi, but I can either get Octopi to work, or the PiTFT to work. They seem mutually exclusive. Has anyone else found this issue?

Yeah, those are probably mutually-exclusive options.
The PiTFT requires a version of the OS that we developed, including kernel modules that are necessary to make the OS work with a second display. The Octopi image almost certainly doesn't have that kernel, and the PiTFT image doesn't include the Octopi pieces.
Given the way Linux is arranged, you'd probably have to merge the two systems and compile your own kernel from the source of both.

Doh! Obviously the answer I dreaded but the most obvious. I'll reach out to the OctoPi developer and see if he is interested in getting this to work.
