Hooking up 2 Wii Nunchuks?

I got 1 Nunchuk working using Nunchuky connected to A2,A3,A4,A5 and this library https://github.com/coopermaa/Wiichuck

Does anyone know how I can hook up 2 nunchuks ? ( i do have a breadboard )

Looks like the I2C address is hard-coded to 0x52. That would mean you can't put them both on the same I2C bus. You might get it to work with SoftI2C on another set of pins. But that would take some library hacking.l

I actually got two nunchuks working by using the Video Game Shield and it works great!

Well, now that the Video Game shield has been discontinued, is there a 2018 way to use two nunchukus together or a way to change the I2C address on one of the of Adafruit's connector without hacking libraries?

You can use an i2c multiplexer, such as https://www.adafruit.com/product/2717.
