i wonder if you guys think it is possible to log the results from a ph meter using arduino?

Looks like the trick is finding the output of the sensor circuit and calibrating it. Once you have that, logging should be easy.

thanks, any tips on how i can find the output signal? i am sorry but i am not that familiar with electronic circuits. What do i need and how do i look for it?

Reverse engineering circuitry generally requires some understanding of electronics. You need to figure out what the components are and how they are interconnected. Once you understand the circuit, you can find where the pH measurement signal is.
