For my projects I normally use a 12V power supply and a UBEC DC/DC Step-Down (Buck) Converter - 5V @ 3A output to run my pi.
Unfortunately "UBEC DC/DC Step-Down (Buck) Converter - 5V @ 3A output" (https://www.adafruit.com/product/1385) is out of stock and because I need this running asap I was thinking of using the Mini DC/DC Step-Down (Buck) Converter - 5V @ 1A output (https://www.adafruit.com/product/1065).
I am not running any usb peripherals from the Pi. I am only running a 16x20 lcd screen a relay and a keypad from the gpio pins. So I don't think the lower current (3A to 1A) should be an issue. Please correct me if I am wrong.
Also why does the "Mini DC/DC Step-Down (Buck) Converter - 5V @ 1A output " have 3 pins, is one an earth?
There isn't a wiring diagram.

It is a ground pin. All voltages need to be referenced to some ground.Also why does the "Mini DC/DC Step-Down (Buck) Converter - 5V @ 1A output " have 3 pins, is one an earth?
There is a data sheet under "Technical Details" with pinouts and sample application circuits.There isn't a wiring diagram.

At this point, we don't have a firm estimate from our supplier. You can sign up for notifications and you will get an email as soon as they are back in stock. But at this point I can't give you even a tentative date.
