MAX31855 "un"grounded thermocouple

I understand the MAX31855 does not support using a "grounded thermocouple", but does that still apply if electrically isolate the whole probe from grounding?

For example, I want to monitor fire temperatures in a wood burning stove. I would drill a hole larger than the thermocouple probe then isolate it from the metal firebox using ceramic washers. Would that allow it to work with the MAX31855?

Yes. that should work. Mica washers are typically used. But anything electrically insulating but thermally conductive should be fine.
