Hi! I was wondering, with the DotStar the width is stated as 13mm. Is that with the cover? If so what is the width of the tape? I ask as I want to fit it into an aluminium extrusion which allows only for a 10/11mm tape width :D

The silicone sheath is 13mm wide. The strip itself is about 10mm.
If you pull the strip out of the sheath, remember that there are exposed pads all the way along it. You'll need some kind of backing to keep them from shorting through the aluminum extrusion.

I was going to have to put some double sided tape onto it to stick it down anyway, which should act as a good enough insulator?

Should do.
If you have the space, consider double-sided foam tape. it's a bit easier to get good adhesion with that, and it will definitely give you insulation.
