Hey,
I was wondering what kind of setup I would need in order to simultaneously use a composite display and headphones, as the Pi 2 has a combined audio/composite jack. I totally am a beginner in all of this and I'm not sure how to figure this out.

There are adapters that break the TRRS connections out to RCA jacks for component video and audio.

Oh, good, I have a few of those lying around.
Is there any way I could wire the screen to the board or do I have to go through an adapter? I knew with the Pi B when the RCA jack wasn't combined to audio, but now I'm confused. I'm looking into making a portable device, so ideally I would go for the first scenario.

Hi-
It isn't really an 'adapter' in the electronic sense; it's a mini-plug with an extra terminal on the shank:
Common Ground for all signals, the others are audio and the video signal.
There is a photo of the cable connector pinout here:

You can prob'ly also get just the plug, and a little careful soldering should do you.
Remember that the video needs to run on coaxial cable.
Also, there are some cables for MP3 & camcorders that do not work. Full details here:
