Howdy! I have a need to monitor a 72 volt battery, but none of the breakout boards you sell can go that high. I was never able to Actually get the Arduino AVR to successfully upload sketches on any version of the Arduino AVR higher than 1.6.4. Irregardless of the library ...

That did the trick!

I should have known better, and thought to myself, "That doesn't sound right", but it was in the tutorial so I went with it.

You might want to look at decentralizing the control system. Instead of using a single microcontroller for everything, use several small ones dedicated to safety in given zones.
