Can you just detect the first press and release, wait 300 ms, and then check again for press/release? An alternative is a long press vs a short press. That's easy to detect with sleep() delays. Both boards will work, and both boards use 32-bit microcontrollers, making them a bit more of a challenge than the 8-bit Arduino Uno or Feather 32u4. Of the two, the ESP8266 is more challenging. The current-limiting resistor built into the button is scaled for 6v, but you can connect an external resistor to make it work with voltages up to 24v. For 12v, you'd want about 220 ohms.
