Hi all,
I'm a newb trying to modify the MintyBoost such that it plugs directly into a micro-USB port on my phone. Would some of you please point me in the right direction on how to do this?

The first thing you need is a Micro USB plug: https://www.adafruit.com/products/1390
Then you need to a 4-wire cable from where the USB "A" socket would normally be installed. This site shows the pinouts for all the USB plug & socket variations. http://www.usbpinout.net/

Thank you for the help, but I'm still struggling to figure out how to connect a micro USB plug to the PCB. The pinouts make sense, but how can I solder the the USB to the board?

You can't solder the USB directly to the board because the pin layout is not the same. The pins are not in the same order and the spacing is different.
You either need a short pigtail cable, or a custom adapter board.

That cable has only 3 wires, you need 4 as in the diagram below: Since the USB micro connectors are small and hard to solder, the easiest way to do it is to start with a pre-made cable like this one: https://www.adafruit.com/products/898
Then cut off the USB A connector, strip the wires and solder them to the MintyBoost output.
