I recently received my DC barrel jack, panel mount, but am confused as to the wiring of the terminals on the back. I want to use one barrel jack to power an Arduino and another to power 2 Adafruit Motor Shields which power 3 stepper motors. The connections to the Motor Shields only use 2 wires, and the cable I bought to jump between the DC barrel jack on the Arduino and the panel mount jack also only has two wires. Is the L-shaped eye ring terminal the positive lead? What are the other two rings?
Also, is the DC barrel jack suitable to use to power the 2 Adafruit Motor Shields? The steppers are run off 6V and my power supply can supply up to 5 A, but the steppers roughly draw about 2-3 A.

The L-shaped ring is for the center pin. The one closest to the edge is for the barrel contact. The middle one connects to the barrel contact when no plug is inserted and disconnects when the plug is inserted.
That connector should be sufficient for powering your steppers.
