Help with biometric sensors / arduino starter pack

Hey all,

I am trying to create an array of biometric sensors for an art project.
Looking for sensors that can measure pulse, temperature and maybe more at just one grip - similar to the workout handle bars at the gym.
Ideally to include measuring the tightness of the grip and the moisture of the hand... whatever is possible resulting in digital measure by just one grip!

Any input / feedback is welcome. Which sensors do you recommend or are suitable? I'm absolute beginner on arduino.

The Pulse Sensor Amped could be mounted on a grip to get pulse oximetry from the fingertips https://www.adafruit.com/products/1093
One or more FSRs in the grip could measure grip strength. https://www.adafruit.com/products/166
And a DS18B20 would be a good choice to measure the temperature. https://www.adafruit.com/products/381
