I am beginning to do surface mt stuff more and more so I have been thinking of building a reflow oven/ hotplate. I like the "roboflow" approach because I have almost all the parts for it at home right now. I was curious how happy you have been with this setup? You mentioned in some comments that you were thinking of adding a solid state relay, have you implemented this? It seems like a PID controller is ideal however they can be pricey, is an arduino controlled skillet going to be "good enough"? I am not looking at doing 100s of boards, maybe 3 or 4 per month.
I suppose I could just use a skillet and turn the temp by hand and watch the boards closely, anyone use this approach to reflow?

you should probably just 'do it by hand' if you only have 4 boards a month
