Data Logging Shield (1141) UTC Time

I am using the Adafruit Data Logging shield (1141) for a project where I need to log the time for UTC timezone. I am in the CST timezone. If the RTC is set to CST time, is there a way to convert the time to UTC while logging? The only other thing I can think to do is set the computer to UTC time before syncing the RTC with the computer. Is there an easier way to do it in the code?

What are your thoughts?

What language are you programming in? Using the RTCLib library, it should be relatively easy to just subtract your local UTC offset from the DateTime generated by the compiler.
