Wave Shield and Multiple Triggers?

I am working on making an arduino drum pad with multiple piezo chips. I am dealing with five different piezo chips and am hoping each of them to trigger unique audio out (WAV, mp3, whatever is easiest, etc.) rather than MIDI.

Clearly, the Wave Shield or the Sound FX board are both good options, however, I have a question concerning the Wave Shield: Can it trigger multiple sound samples like the Sound FX board can or am I limited to one track at a time? Could I have one pin trigger a sound sample while another pin would trigger another sample?

I will be using the analog to digital converter in the Arduino Uno to read the piezo signal as a drum hit, which will then trigger the sound sample. I will be running this through a quarter inch sound jack into an external amplifier. Which board would be better suited for this option?
