Hi. I am a complete beginner here. I want to have touch areas independently light up a single LEDs for one project. Can I do this with a FLORA, the fabric, conductive thread, NeoPixels what else do I need? (BTW, I can sew well.) I put one of the FLORA kits in my cart already and some extra NEOPIXELS in there too.
For the second project I want touch fabric areas to independently send preset text to one of the LCD or flexible LCD screens. What do I need or this? FLORA, thread...what do I use to connect the display to the FLORA?
Lastly, can I use a Macbook Pro for Arduino? Sorry for all of the questions!

It sounds like you're on the right track. Check the Flora guide for ideas and techniques https://learn.adafruit.com/getting-started-with-flora.
For screens, you want to look for something that interfaces using I2C or SPI. The Flora supports both.
Finally, yes. Arduino runs on all the OSes that are commonly used: Windows, MacOS, and Linux.
