Help on using other devices with the LCD + shield kit?

I have a plan for a device I'm going to make for logging infrared and temperature data. I'm going to be using the MLX90614, an IR sensor that communicates with my raspberry pi through i2c. I'm also using the nRF24l01, an RF module that communicates through SPI and is used to send the tempurature data back to another computer that will log it in a csv file and upload it online. I thought I would add on the Adafruit LCD + shield kit so that the pi can display whether or not it's accurately recording temperature and also for user input and changing options. The only problem is, the way the shield is designed, it covers the entire set of pins on the RPi 3, blocking the i2c and SPI connections. The website says that multiple i2c connections can be hooked up using this board, but it doesn't explain how this can be accomplished. I would like to use this board as it would be very useful for my project, but I also need to be able to use another i2c and gpio connection along with it. Any help would be appreciated.

You can add a prototyping plate between the Pi and the display. You will need to build it with stacking headers so you can stack the display plate on top.
