Level shifter from 3.3v to 5v for LED matrix

Hello,

In addition to my previous post about the capacitor for a LED matrix - viewtopic.php?f=47&t=130898, the Uber guide for LED strips and leds talks about using a level shifter to 5v if my data output is different.
It reference 2 level shifters - 74AHCT125 and 74HCT245. From the adafruit product page of 74AHCT125 (https://www.adafruit.com/product/1787) it says it's perfect for 3v, and searching the internet for 74HCT245 (as the uber guide' link is to a completely different product) says that it's for 3.3v (viewtopic.php?f=47&t=47420&sid=6f6ece936d65e8158713022c7ed27734#p238463).

So which should I use ?
Specifically, I'm going to use a Particle's Photon as the micro controller, which provides a 3.3v on the pins.

Either will work fine. Most devices these days are designed for 3.3v or 5v logic levels. "3v" is often used when referring to "3.3v" logic levels.
