Plugin Power Supply for Electroluminescent (EL) Wire

You will need an inverter like this one: https://www.adafruit.com/product/448
That can be powered from batteries, or a 12v plug-in power supply like this one: https://www.adafruit.com/product/798

If I go with the plugin is there any way to add additional strands and run off the same inverter and 12v plug?
Or is the only option to extend?

That inverter will handle up to 6 meters total of the high brightness wire. You can probably run 2 or 3 of the inverters from the plug-in supply.

I just purchased the sound activated inverter. It is my understanding that inverter can be plugged into a DC power supply instead of a battery pack. My question is how many amps can the inverter take? And approximately how much el wire/ el tape can be driven off of it? Sorry for bombarding this post I just had a very related question and figured knowledge is power, yes?

Current draw is determined by the load, not the supply. It will draw only what it needs. Typically less than 100mA.

And approximately how much el wire/ el tape can be driven off of it?

These will drive 2-3 meters of high brightness wire.

Okay, so lets say I plug in a 3A 12V DC power supply, it wont fry the inverter or hurt anything. The power supply can HANDLE 3A but may only use say 500ma

That is correct. The inverter will only draw as much power as it needs from your supply.
