Project Help re: RA8875 driver and larger TFTs

I've done several projects using Arduinos and Feathers with the smaller TFTs. I now want to do something on a larger screen and with more sophisticated graphics (multiple graphs, gauges, etc). The display will update regularly but I don't need to update in real time. I do want redraws to be fast, unlike my prior projects where you can watch the microprocessor draw the screen top to bottom. Offscreen drawing to a buffer would be cool but not sure this hardware can do that (cool, not mandatory).

From looking at the site I think the RA8875 driver should work with the "5.0" 40-pin TFT Display - 800x480 with Touchscreen". Let me know if I'm wrong. Assuming I am right my question is what microprocessor is compatible and also which would give the best performance. I have a ESP32 Feather that I'm not using - would that be suitable? Or do I need something else? Note: I do need WiFi on the board.
