I would also like to mention that I just recently got mine last 10th of September and had it running a couple of hours after receiving. It took me a couple of cigarettes and a couple of searching to figure out how to get it up and running. I'm pretty sure you will also get yours running soon.

is this setup very similar if I use a Macbook, or should I buy a memory card adapter too?

You only need a text editor. But be careful to not use something like a word processor, which may add extra stuff to the text file. Just use a simple text editor.

I am not familiar with MacOS so I don't know what is the name of the text editor program available on Mac PC's. But you can also go ahead and install Notepad++ on your MacBook to edit the wpa_supplicant.conf which you can download from the link I gave and the config.txt file which you can find inside the microsd card drive.

It is very important that those 3 files (wpa_supplicant.conf, config.txt, and ssh) are present inside your microsd card drive and you have edited the wpa_supplicant.conf and config.txt before inserting it back to your Pi Zero WH device.

I just bought a little dongle at walmart, attempting to do this all on windows now! We'll see how she goes.

So i tried it on windows first (setup the pi and the pi is connected to my wireless network i can see it). However, my desktop doesn't use wireless its hardwired. So i'm attempting to SSH into the Pi with my macbook atm.

Doesn't matter if your PC is connected via ethernet and your Pi device is via wireless, you can still do an ssh using PuTTY. It will still connect as long as you are connecting to your Pi using the IP address assigned by your router and both the Desktop PC and your Pi is on the same network.

I couldn't get it to work on Windows, but luckily it was SUPER easy on Macbook to SSH in (thanks to your written text).

I'm currently on the "install" Pi Hole portion. Hoping to get to the part where the screen works soon, that will really show its working :)

I am glad that you are on your way getting it to work, since you are now able to ssh to your Pi device all you need to do pretty much is to get everything downloaded, updated, and modified.

Once Pi-Hole is installed the next thing you need to do is make some changes and install the necessary components to get your PiOLED to work. You will need to start on this tutorial for the PiOLED --> https://learn.adafruit.com/pi-hole-ad-blocker-with-pi-zero-w?view=all#install-pioled

Here's what I'm stuck on.

I created the "nano" and pasted the code but then tried to do the following codes and a few didn't work, ended up trying the test startup and got

"pi@raspberrypi:~ $ sudo python3 ~pi/stats.py
Traceback (most recent call last):
File "/home/pi/stats.py", line 35, in <module>
from board import SCL, SDA
ModuleNotFoundError: No module named 'board'
"

I'm not sure where I went wrong, is there a way to remake the "Sudo" and try again?

Probably you did not saved the changes you made on ~pi/stats.py

Type again the command nano ~pi/stats.py and copy/paste the script stated here https://learn.adafruit.com/pi-hole-ad-blocker-with-pi-zero-w?view=all#update-stats-dot-py-program-6-24

After you paste the script you can press Ctrl O to write and save the changes. You can also press Ctrl X to exit, the program will prompt you if you wanted to save the changes, just press Y for yes then Enter.

Try running this command which will scan the I2C bus for all connected device addresses:
Code: Select all | TOGGLE FULL SIZE
sudo i2cdetect -y 1

Please post another screen shot of that output.
