Adafruit AS7262 6-Channel Visible Light has violet, red, orange, blue, green, yellow channels to sense a color. Why does it just use Red, Green, Blue channel?

RGB in the case of LEDs uses red, green, and blue in controlled brightnesses to simulate a spectrum of colors. Actual colored light exhibits various wavelengths (that whole light being a wave/particle thing). So the sensor detects the strengths of 6 different wavelengths (450nm, 500nm, 550nm, 570nm, 600nm and 650nm) which correspond to the different colors.
