I have a number of 7Ah 12V batteries and I worry that their charged status of about 12.5V or higher might be more than the 5V Verter can handle. When I connected my cell phone to this arrangement, the current was between 1.4 and 1.0 amps and the output voltage was approximately 5.4V. I know you have better devices that can handle higher input voltages, but if this would safely work, I'd like to use it to charge my phone on occasion. The verter got 'a bit warm' but it appeared to function well otherwise.
Was I lucky not to damage my phone?

The Verter can handle that, but it is pushing the limits. The UBEC might be a better choice: https://www.adafruit.com/product/1385
