2.8 capacitive touchscreen with a pi zero

I have a student team intent on using the Adafruit PiTFT capacitive touch screen with a Pi zero for a project involving a water bottle(thus the small size requirement). We received one screen with both connectors installed. The students found a video of adapting the connectors to accommodate the zero involving a lot of ¨circuit surgery" on the connectors. Can these simply be removed with a desoldering tool(hollow tip iron with a vacuum tube? Do I need signals from both connectors to interface to the zero? Is there a Rasperian OS with the capacitive touch screen mods available for the Pi zero? Any information would help for this project that is due before Thanksgiving.
