Hey folks! I'm thinking about using circuit playground and the
block editor with my intro to coding and the newbs on the robotics team.
(next school year- maybe we'll have a lid on covid by then?) BUT you guys
have released a few versions, so My actual question is- which build would be
most appropriate? Our school system blocks a lot of stuff, so bluetooth
would probably not even work for us...
circuit playground at school???

The CP Bluefruit has the most powerful MCU and is the clear choice if you want to use CircuitPython.
The CP Express also supports CircuitPython but its less memory limits how much code you can have.
The CP Classic is C++ only. The others are programmable in C++ as well.
If the block editor is your focus, then the Express is what you want.
In terms of sensors they are comparable.
