Hi we want to buy the complete set of this in picture - have some problems figure out the parts in the picture - sensor is ok, but oled and board?

That's a 128x64 OLED featherwing with STEMMA QT connector: https://www.adafruit.com/product/4650.
The feather could be pretty much anything, but an M4 Express is always a good choice: https://www.adafruit.com/product/3857. If you want to use CircuitPython, I advise the M4 and avoiding the M0 Feathers.

We have a few demos for students, so if we buy a few of these 4650 & 3857 along with the sensor board then we have all that is neccesary
Can you program this with the standard Arduino IDE?

1) You will want some STEMMA QT cables as well https://www.adafruit.com/product/4210.
2) yes, as well as CircuitPython
3) Yes, that the right sensor demo. When you install the library in Arduino, the demos/examples will be loadable from the File->Examples menu.
