Hi,
I am using a Raspberry pi # with the Adafruit PWM/servo HAT (https://learn.adafruit.com/adafruit-16- ... i/overview), and want to use an RGB LED matrix also. Is it possible to drive neopixel LEDs from the PWM outputs of the HAT? Or can I stack a Unicorn hat (https://shop.pimoroni.com/products/unicorn-hat)on top of the servo HAT?

The PWM/Servo HAT will not drive an LED matrix from the PWM outputs. But you should be able to stack the Unicorn HAT on top of it.

Hi,
I have no luck with using the unicorn hat with the motor shield. If I connect it to the raspberry, it is working fine, but If i stack it on the motor HAT, it is not functioning. Even if I only connect it with a 40 pin GPIO cable (no HAT between), it is not functioning anymore.

Checking the schematics, I don't see any pin conflicts between those two HATs. And if a plain 40-pin cable is not working either, then it may be an issue with the Unicorn HAT itself.
You might want to post your question over on the Pimoroni forums. They are the designers/manufacturers of the Unicorn HAT and have a lot more experience with it than we do here.

Is it possible to connect a single LED (using the 5 or 3 V , the ground connection and the GPIO #18 on the top of the HAT?

Yes. The header pins are a straight pass-through. So you can use them as you would on a bare Raspberry Pi.
