So I wanted to use the "Eye Bonnet Display" kit https://www.adafruit.com/product/3813 in a project I am working on. I don't want it to display the eyes since I am using the displays for AR purposes. I need to display text, images, video, and more. How could I use the displays for my purpose?

Sure. The SnakeEyes Bonnet just lets you plug a couple small TFT displays into the Pi. It's essentially an adapter. The only circuitry is the 4 channel ADC. How ou go about using them... no real idea. The eye code might offer a start https://github.com/adafruit/Pi_Eyes.
