Latency on BLE HID messages? Options for real BT?

I'm interested in building a wireless bluetooth game controller. Back in the day, the Bluefruit EZ Key would have been the go-to for this and done a great job. Nowadays all of that has been killed off in favor of the Low Energy stuff, which is designed for a lot of things but low latency ain't one of them. I really want to get under 10ms to consider it a credible controller design, but my cursory research suggests that the BLE boards available from Adafruit are nowhere in the ballpark.

Assuming I'm correct in this understanding, what components can I use to get real full fat BT HID?

I'm not sure we have anything I can suggest off the top of my head, sorry. Classic BT has speed advantages (at the cost of complexity), but it's not something a lot of vendors are producing easy to source chips for today. :(
