I am looking to make a wifi touch lamp and I don't know which product to use and how to program them. The instructable that I viewed suggested a Particle Photon w/o headers. I also saw Adafruit HUZZAH ESP8266 Breakout, will this work? How difficult is it to program? I am completely new to this and have no idea what I am doing so any help is greatly appreciated.

Could you post a link to the instructable you're looking at? I may be able to make suggestions with more information about the project.

You might want to use a Feather Huzzah ESP32 (more RAM, faster) with headers attached. Check out the Adafruit IO Basics series (https://learn.adafruit.com/series/adafruit-io-basics) of guides for an introduction to our platform.

You could swap out the Particle with Feather HUZZAH ESP32. They both use the Feather form factor

Ok it says it is out of stock will the HUZZAH ESP8266 Breakout work or do I need the Particle Photon? Also what do I need to program it?

Looking carefully now - their code is particle-specific. You'll want to pick up a Photon (https://www.adafruit.com/product/2722) if you're following along with their guide.
