Adafruit IO and PMS5003 particulate sensor

The PMS5003 sensor requires a serial connection to send its data to an Arduino. If I have this sensor working on an UNO, can I still send data to Adafruit IO, or do I need an Arduino board (Mega) with more than one serial channel? ... I hope this question makes sense :-)

Yes, you'll need a board that has a free serial port (the UNO's is used for the onboard serial/USB chip). Alternatively, you should be able to use software serial. See https://www.arduino.cc/en/Reference/SoftwareSerial
