Language for Pi, servos, touchscreen, I/O control?

Interested in setting up Pi to run servos (I see there is a hat for that) and using a touch screen for displaying servo layout, position and controlling servos. Question is language to use. I see there is Python driver for servos. Can Python put drawings on the display, then take touch at a servo location on display to control that servo? (Obviously there is programming needed, but does Python on Pi support these things?) Would also like digital I/o for switch opening and closing, LEDs on and off. When finished, can the program and other code be stored on the Pi so the "system" becomes a dedicated controller? How can I find out what input, output, display functions Python (or other recommended language, e.g., Processing) are supported with Pi? Suggestions welcomed!
