I'm in the middle of a CRICKIT project, I'm hoping to increase the strength of an electromagnet attached to the Drive outputs. I can run the four channels in parallel to increase the strength without damaging the CRICKIT?

Yes. As mentioned in https://learn.adafruit.com/adafruit-crickit-creative-robotic-interactive-construction-kit/crickit-tour#4-x-high-power-drivers-2988004-17 using multiple drive connections is how to get more current. Each can handle 500mA. The amount of current available will be limited by the power supply used with the Crickit.
