hi - the CPB does not have a true analog output like the CPX, we made a special PWM-output-for-audio - its pushing the abilities of the nRF past expectation. with PWM audio, there will be a click due to the square wave output. at this time there is no way to not have a click or reduce PWM-background-noise - PWM is made of square waves :)
I2S is how the nRF can generate high quality audio

Which I2S board can I use with a CPB board?
I saw Adafruit I2S Stereo Decoder - UDA1334A breakout board but CPB board is not mentioned in this guide https://learn.adafruit.com/adafruit-i2s-stereo-decoder-uda1334a/circuitpython-wiring-test

Do I also need Adafruit MAX98357 I2S Class-D Mono Amp shown in this guide https://learn.adafruit.com/adafruit-max98357-i2s-class-d-mono-amp/circuitpython-wiring-test ?

either should work, we used the MAX for sure. you can use *any* pins for nRF52840
