A lot of Adafruit products use the name 'express'. What does the name express mean ?

"Express" means that the board includes an extra SPI flash memory chip, usually 2MB. CircuitPython uses the chip as a tiny filesystem (CIRCUITPY) to store programs and libraries. CIRCUITPY appears as a FAT12 USB drive on the host computer. The non-Express boards also provide CIRCUITPY, but they use a section of the on-chip flash memory, and there's only room for a 64KB filesystem.

If you're using Arduino, you can also use that chip for extra storage, but the USB drive feature is not available.
